MSZ Business Forum with Vault City Brewing

Our next Business Forum will take place on Wednesday 10th June on BioCampus on the edge of the Zone for a chance to visit independent craft brewery and Scotland’s largest sour beer producer Vault City Brewing. led by Katie Campbell, Marketing Assistant with Vault City.

Vault City Brewing relocated from Portobello, Edinburgh, and moved all production into larger premises on BioCampus in November 2025 for the company’s expansion helped by a successful Crowdfunder. The BioCampus building is seven times the size of their previous property and is currently being transformed to provide the specialised facilities for production, fermentation, cooling, and packaging, as well as a suitable space to house this equipment.

The company is preparing for growth, and the production of a new range of barrel-aged beers is also on the horizon. Alongside some fresh tanks (and a brand-new 65-hectolitre, three-vessel brew kit), Vault City Brewing invested in a pasteuriser, a new kegging line, a de-aerated liquor (DAL) plant, carboblend, fully automated CIP skid and a decanter centrifuge. Together, these upgrades significantly improve stability, oxygen control, process consistency and most importantly, overall flavour.

Vault City Brewing expects to be able to produce more than 10 million litres of beer per year – an increase of more than eight million – as it sets its sights on becoming the worlds largest producer of sour beer. The company has been described as the ‘Willy Wonka of sour beer’, with a unique blend of traditional brewing and mad science to create a variety of weird of wonderful beers which have converted even the most stubborn non-beer and traditional beer drinkers, with this mix of accessible and adventurous flavours.
